CAVITE CITY - National Filipino Food Month is observed to encourage, maintain, and ensure the transmission of vast Filipino culinary traditions to current and future generations, according to Presidential Proclamation No. 469.
The Provincial Tourism and Cultural Affairs Office (PTCAO) in collaboration with the Cavite Provincial Council for Culture, Arts, and Heritage hosted the Kalutong Caviteo: e-Kwentuhan via the Cavite Tourism Facebook page (CPCCAH) recently.
During the program, Ms. Rozelle Sangalang, Provincial Tourism Officer, warmly welcomed the participants and provided a brief overview of Cavite's heritage, not only in historical events but also in local traditional cuisines.
Razorchef Philippines’ and Culinary General Christopher Carangian gave a deeper understanding on local food culture in Cavite and his discoveries of the history behind the traditional Caviteño recipes such as ciento quince, halo-halo, nilagang bulalo, Zapote chicken bbq, Imus longganisa, and pansit pusit among others. Chef Chris also pointed out that the “tahong and talaba” or mussels and oysters in Bacoor Bay and Amadeo coffee can be regarded as important addition to Cavite’s gastronomy.
Finally, he encouraged everyone to preserve and promote the province’s local dishes.
During the livestream, Chef Chris' lecture and success stories inspired viewers, resulting in thousands of views and positive feedback.
Dr. Emmanuel F. Calairo, Commissioner of the Philippine National Historical Commission, thanked PTCAO for taking the initiative to hold such an event in the midst of the crisis and pandemic. (with report from PTCAO)
